Spiced Honey-Oat and Coffee Pie Recipe with Red Diamond

To me, part of the fun of the holidays is getting to spend time in the kitchen baking treats that don’t make it into my everyday baking routine very often. Now that I’ve gotten older asking what I can bring to help whoever may be hosting our family holiday gatherings isn’t just a courtesy but rather something I want them to take me up on! More often than not, I am asked to bring a dessert of some kind, so I am especially excited to share a new favorite with y’all, Spiced Honey-Oat and Coffee Pie. Coffee and baking are two of my favorite ways to bring families together for the holidays, and Red Diamond ® Coffee does just that, especially in this recipe.

Perfect’s not easy, and the prep work that goes into bringing busy schedules together to make holidays memorable has become more and more evident over time. So, not showing up to gatherings empty-handed is the very least I can do whether I’m joined by family or friends. On top of bringing a dessert in hand, this holiday season, I’ll bring along Red Diamond’s Ground Coffee as a hostess gift of sorts that gives back to the whole family. Ingredients

Premade pie shell

1 ½ cups old-fashioned oats

2/3 cup firmly packed light brown sugar

1 ¼ teaspoon kosher salt

¼ teaspoon ground ginger

1/8 teaspoon ground nutmeg

½ cup light corn syrup

6 tablespoons unsalted butter, melted

½ cup clover honey

1 ½ tablespoon Red Diamond Coffee, brewed

2 teaspoons vanilla extract

4 large eggs, room temperature

Whipped topping, to serve

Instructions

1. Preheat oven to 350 degrees Fahrenheit.

2. Line a rimmed baking sheet with parchment paper. Place oats on prepared pan.

3. Bake until lightly toasted, about 10 minutes, stirring occasionally. Allow time to cool.

4. Reduce oven temperature to 325 degrees Fahrenheit.

5. In a large bowl, whisk brown sugar, salt, ginger, and nutmeg. Add corn syrup, melted butter, honey, coffee, and vanilla; whisk until well combined.

6. Add eggs, one at a time, whisking well after each addition.

7. Stir in toasted oats; pour filling into pie crust.

8. Bake until filling is set and slightly puffed, 40-45 minutes. Let cool entirely on a wire rack. Serve with whipped topping. Pairs excellently with coffee.

While the coffee flavor in the pie isn’t overwhelming, it’s such a fun new way to enjoy my favorite beverage in a different way. No matter the gathering, I think this pie will be as big of a hit as coffee this holiday season!
